After spending a decade as a chef in some of San Francisco's top restaurants, including the famous Quince, Galen Garretson decided it was time to get out of the kitchen and find a new challenge: providing his peers and home cooks with the highest quality knives on the market. Since June 2011, Town Cutler has been sourcing blades from Japan and the US and, more recently, producing their own line of knives and accessories, including leather scabbards, palette knives and trendy knife rolls constructed of waxed canvas and leather. A taxidermied raccoon clutching a long-bladed knife like a samurai sword bares its teeth in the front window, hinting at the rustic interior. Two long work tables divide the narrow space, with a picture window-sized display case showcasing all the types of knives available and a chalkboard "Window of Opportunity" advertising local restaurant jobs on one side, and a workspace where Galen and his team stitch together the cloth and leather goods on the other. Towards the back, bookshelves house even more knives and select cookbooks. Pastry cooks will enjoy rifling through the vast collection of deep-bowled antique silver spoons for making the perfect quenelle in every size.
