Thorough Bread

      On a busy street with municipal trains and buses bustling by all day, Thorough Bread and Pastry provides a warm escape through their almond croissants, assortment of teas, and cozy back patio. It remains a neighborhood bakery and café even though it continues to receive glowing reviews for its artisan goods. The bakery was started by Michel Suas and his wife Evelyne in 2008. They are also the founders of the San Francisco Baking Institute, a phenomenon in itself, which has lent consultation to some of San Francisco’s most well-known bread makers. Like the companies the couple has shared their wisdom with, Thorough Bread and Pastry follows artisan principles: no shortcuts, no additives, a commitment to the ingredients and making everything from scratch.
