Sébastien Gaudard

    Sébastien Gaudard may have been born to a famous pâtissier father, but that doesn't mean that the owner and head chef of the eponymous pâtisserie located in the 9th arrondissement had everything handed to him on a silver platter. Gaudard did his time working for friends of his father, and later as a chef during his military service, before coming to Paris and doing stints at the likes of Fauchon and Pierre Hermé. In launching his own brand, Gaudard looked to the past for inspiration for not only the design of his boutique, but also the style of his pastries, putting fresh spins on traditional desserts like Le Paris-Brest, Le Mussipontain (an homage to his parents), La Tarte au Citron, L'Eclair au Chocolat and Le Kougloff. The deep green exterior of 22 Rue des Martyrs gives way to a brightly-lit interior that feels like an old-fashioned general store.
