Baguettes are practically synonymous with French food for visitors to Paris, but there is one boulangerie where you won’t find any of the iconic narrow loaves of bread. Instead Poilâne, the family-run bakery that has been operating out of its original Saint-Germain des Prés location since 1932, specializes in a lesser-known but equally delicious variety: the round sourdough loaf. Following the same recipe as founder Pierre Poilâne, this signature bread relies on high quality stone-ground flour, sea salt, a wood-fired oven, and starter dough from the previous batch rather than industrial yeast. (For history aficionados this means that each new loaf still retains a small piece of that first pre-WWII batch). The boulangerie also offers other traditional French pastries like croissants, pain chocolat, shortbread cookies, and the seasonal King’s Cake, but bread remains their foremost passion.
