Le Chocolat Alain Ducasse

    Celebrated chef Alain Ducasse is known worldwide for his many gastronomic achievements, and La Manufacture de Chocolat is yet another one of his dreams realized. His interest in chocolate dates back to the 70's when he worked for Lyon's artisan-chocolatier Maurice Bernachon. In February 2013 he finally brought the bean-to-bar chocolate manufacturing to Paris, establishing his atelier/boutique in a 320-square meter cobblestoned courtyard (formerly a Renault garage) on Rue de la Roquette near Place de la Bastille. Under the very competent hands of executive pastry chef Nicolas Berger, La Manufacture produces sumptuous pralines, ganaches, truffles, and over 48 varieties of chocolate bars on site. The beans come from as far as Peru to Vietnam, selected for their purity as well as their personality. All go through the artisanal process of roasting, grinding, crushing, conching, refining and moulding using vintage machines sourced from all over Europe.
