Sullivan Street Bakery

    At Sullivan Street Bakery the importance of bread is not taken lightly. Jim Lahey, founder of this fine institution, first learned about the art of bread baking in Italy. He moved back to the States and worked 37 different jobs before finally following his dream and returning to Italy to research bread. He came back to New York equipped with wild yeast he had cultivated while abroad and opened Sullivan Street Bakery in 1994. Today the bakery has locations in Hell's Kitchen and Chelsea, and specializes in small-batch bread, Roman-style pizza, rustic Italian pastries and cookies. Ingredients are sourced locally whenever possible, and Jim creates many of the recipes while he is experimenting in the kitchen. In addition to these aspects, the bread is distinguished by its long period of fermentation, which results in full, rich flavors.
