In June 2006, Patrick Watson and Michele Pravda, owners of the Smith & Vine wine shop in Carroll Gardens, created their second storefront, Stinky Bklyn, thereby complimenting their original venture with some well-ripened dairy products. Both partners, and also manager Chris Remy, have a background in the restaurant and wine industry. Perhaps that explains Stinky's delicious assortment of cheeses and cured meats, as well as various pickles, local dairy and an impressive selection of American specialty beers. One thing that makes Stinky Bklyn special is their "cave," an aging unit set into the wall that is kept at around 50 degrees Fahrenheit and at high humidity, which allows cheeses to mature for up to a year under optimal circumstances. That way the cheese is ripened to perfection by the time you get to enjoy it. Stinky Bklyn also carries a variety of hams cut from the bone right in front of your eyes. Some of these delectable meats, like the prosciutto, suggest a European influence, but there are also country hams from the South and other American staples. And if you still haven’t had your fill of cheese, ham and beer, Stinky puts together tastings and classes because food appreciation isn't always a priori. And then there is Stinky's famous annual "Stinkfest," a cheese eating competition, which involves consuming as much Cantal cheese in two minutes as humanly possible.
