Mast Brothers Chocolate

    The air in Mast Brother’s Chocolate is thick with the rich scent of roasting cocoa. The dark little beans fill the shop—scattered artfully across stone slabs, poured generously into white bowls, and stacked in huge sacks piled high against the brick walls. Mast Brother’s Chocolate, opened by Rick and Michael Mast, is the first bean-to-bar chocolate shop in New York: the beans in the shop are roasted, processed and wrapped into bars whose taste reflects the origin of the cocoa. Self-described purists, Mast Brother’s eschews extra ingredients like cocoa butter and soy lecithin and only adds sugar during processing; the amount is carefully calculated to achieve the proper balance of flavors and the result is an assortment of unique, flavorful chocolates. The shop sources its beans from a handful of partners from around the world and prides itself on direct trading for the highest quality cocoa.
