Japan Premium Beef

    Opened in 2009, Japan Prime Beef sells Washugyu beef, a hybrid of Japan’s Kuroge Wagyu and U.S. Black Angus. The store raises its cattle on a ranch in Oregon (run by the storied Mr. Yano) in the Japanese style: Cattle are fed with rice straw—rather than grain or grass—and raised 27 to 30 months rather than the average 18 to 24. All this adds up to richly colored, deeply marbled, and extremely flavorful meat. At the bright and minimalist store you’ll also find a great selection of Japanese condiments and steak in tasty marinades like sweet sake, honey or yogurt, and white miso. JPB’s head butcher Eiichi Yamamoto has plied his trade for fifteen years and specializes in custom cuts of shabu shabu and sukiyaki, making it the place to go if you’re hankering for some exquisite Japanese or Korean style barbecue.Show lessRead more
